From the countryside of Southwestern France to the coast of South Florida, Tracy and Alain Treville somehow met working in the kitchen of The Four Seasons in Atlanta, Ga. The rest, as they say, is history. After 11 years of living in France, 2 children, 2 dogs, 2 cats and 4 chickens later, they moved to Spring Hill, TN to settle down and continue cooking!
Alain has spent the last 25 years working as a chef through Europe, 2 years as Executive Chef of Chateau West on West End Avenue and has now started our third year operating Et Voila Bistro, food truck and catering. Along the way he has gained an appreciation for the American way of life and instilling his love of food in everything he makes.
What we intend to bring to Nashville with Et Voila Bistro is a true experience of French street food. What is street food in France? When you walk into a bakery and you buy a sandwich with the freshest baguette you can find. Or walking into a bistro and ordering a plat du jour. An affordable, fresh cuisine, always made from scratch with simple ingredients.
